I've been shooting on a super 8 with no sound. I'm considering buying a super 8 with sound, but wondering what that does to the film choices?

Well, there's good news, and there's bad news. The bad news is they don't make Super-8 Sound Film anymore. The Good news is you can still find some (although it's outdated and needs to have been stored properly to still be good).
The other good news is you can either post-stripe your film, or you can record the sound via mini-disc or video camera, and sync the sound either in NLE environment, or via post-striping the sound.

So does that mean that plus-X for example will work in a sound camera?

No, all BW and white film is silent. All silent film will fit into all sound cameras, No sound film will fit into silent cameras.

However, there are a few cameras that had "fake" dummy sound heads in them so that a sound film cartridge could be used. But since sound cartridges are no longer made, that feature is not really necessary anymore.
